Betty shows an update of her herb garden. You will see that most of the herbs, tomato plants, and pepper plants are doing well. I picked five fresh herbs to make a lovely Herb Mayonnaise, which is below:

Herb Mayonnaise

(Note: You may use dried herbs in place of the fresh herbs—just use 1/3 as much.)

1 cup mayonnaise
1 tablespoon finely-chopped fresh parsley
1 tablespoon finely-chopped fresh chives
½ tablespoon finely-chopped fresh basil
½ tablespoon finely-chopped fresh dill
½ tablespoon finely-chopped fresh oregano

Stir together all ingredients in a small bowl. Refrigerate until ready to serve. You may use herb mayonnaise as a sandwich spread, or use it in the place of regular mayonnaise in potato salad, etc. It perks up the taste quite a lot! I will be uploading a recipe using this Herb Mayonnaise tomorrow. Enjoy, and have a happy day!!! –Betty
